One of my favorite things to make in the kitchen is homemade almond milk.
There is just something so satisfying about it. And not to mention just how much better it is then the stuff from the store! I also love that Mila is really into helping in the kitchen right now, and I want to keep her engaged with that as much as possible. Although in this house, B is kinda the best at making this. It’s a family affair for sure!

Kept it pretty simple for photos as our kitchen is still a bit of a construction zone.

I personally double the recipe and it usually will last us the week.

The basic recipe:

1 cup almonds soaked in water (I soak them overnight)

4 cups water

3-4 dates

pinch of sea salt

1 tsp vanilla extract

How:

Strain and rinse soaked almonds. In a high powered blender, blend almonds and dates with 4 cups water (about a minute). Strain milk through cheesecloth or nut milk bag (I personally love and use this one). pour milk back in the blender and add pinch of salt and vanilla, blend well. Pour milk into glass pitcher and you’ve got yourself some creamy homemade almond milk! Use within one week.

For chocolate milk:

add a few extra dates when blending almonds, then add two tablespoons cacao powder when doing the final blend

For vanilla cinnamon milk:

Yup, you guessed it. Add cinnamon and extra vanilla for the final blend.

What to do with the almond pulp?

+Make Almond flour.
We make a lot of banana muffins around here (a Mila request) so when I have this on hand I used it in place of part of the flour. (dehydrate in low temp oven for several hours, pulse in food processer or high powered blender)
+Make some homemade “bitchin’ sauce”.. I’m seriously addicted to this stuff..
+Make a face scrub (coconut oil, almond pulp, frank oil, lavender oil)
